Ingredients
200g Mediterranean salad mix
10 anchovy filets
10 dried cocktail tomatoes
50g parmesan
50ml olive oil
1 clove of garlic, finely chopped
2 egg yolks (boiled for 5 minutes)
1 tbs balsamic vinegar
Method
Beat half the anchovies together with the garlic, oil, balsamic vinegar and egg yolk to form a cream. Toss together with the salad leaves and the dried tomatoes. Divide into four portions. Decorate with the remaining anchovies and parmesan shavings.
