Ingredients
200g Mediterranean salad mix
1 fennel bulb
For the dressing:
Juice of 2 oranges
1 bunch of finely chopped basil
50ml olive oil
1/2 tsp Dijon mustard
1 tbs honey
1 pinch of salt
Method
Cut the fennel into wafer-thin slices. Whisk together the dressing ingredients in a bowl and then toss the salad leaves and fennel slices in the mixture. Divide into four and serve.
