Ingredients
½ tsp of baking soda
1 head of broccoli, cut into florets
8 thick pork chops
500 ml milk
50 g butter
3 tbsp of flour
50 g cheese (Emmental or Swiss cheese), grated
pinch of freshly ground nutmeg
salt
olive oil
white pepper
Method
Add the baking soda and one teaspoon of salt to a pot of boiling water. Add broccoli and boil for three or four minutes. Remove and immediately cool in a bowl of ice cold water. Melt the butter in a saucepan, add the flour, and stir it continuously, until it turns light brown. Add milk, whisking continuously to prevent lumpiness. Season with salt, nutmeg and white pepper.
Preheat the oven to 200 degrees Celsius. Sprinkle salt and white pepper on the pork chops and fry both sides in a hot pan for 1 minute on both sides. In a baking pan, place the pork chops next to each other and cover with the broccoli florets. Pour the sauce on and sprinkle with cheese. Bake in the oven for 10 to 15 minutes. Serve with mashed potatoes or steamed rice.
