Ingredients
600g black pudding
300g flour
3 eggs
300g wholegrain bread
oil for frying
For the salad:
400g red onions
80g sugar
100ml red wine vinegar
4 star anise
300ml water
Method
Place the salad ingredients in a saucepan, cook together for 20 minutes and then leave to cool.
Mince the fresh wholegrain bread and cut the black pudding into 2-3cm-thick slices. Dip the pieces first into flour and egg and then use the breadcrumbs to coat them. Fry in hot oil until crisp.
