Ingredients
250g cooked, smoked ham
4 endives
30g butter
300ml DiBonis - DiMerlot 2008
1 tbs balsamic vinegar
2 tbs sugar
olive oil
Method
Cut the ham into strips. Caramelise the sugar in a pan, then add the wine and balsamic vinegar. Bring to a simmer, add the ham, cook for 5 minutes, then add the butter and cook for a further 2 minutes. Halve the endive and sauté in a little oil in a hot frying pan. Pour over the braised ham in its sauce before serving.
