2 lemongrass stalks
50g lemon curry paste
300ml coconut milk
500g king prawns
olive oil
Method
Slice the lemongrass into rings and fry with the curry paste in a dry frying pan for 5 minutes. Pour in the coconut milk and bring to the boil. If it’s not sweet enough, then add 50ml Tokaji aszú. Fry the prawns in a little olive oil in another pan for a few minutes. Add the cooked prawns to the coconut sauce and bring back to the boil.
