Ingredients
800g aged beef neck (4 slices)
salt
For the dressing:
100ml reduced-salt soy sauce
1 tbs tamarind
1 tbs sesame oil
200ml beef stock
100ml Samuel Tinon - Szamorodni száraz (dry) 2007
6-8 spring onions
2 Thai chillies
Method
Heat the dressing ingredients in 200ml water, add the sliced chillies and spring onions cut into large chunks and cook for a further 10-15 minutes. Sear the steaks in a frying pan until it begins to smoke, add a little oil and fry for one and half minutes on each side. Set the steaks aside to rest for 10 minutes. Then slice and serve drizzled with the spring onion sauce.
