1 kg pork leg
2 oranges
1 bunch of basil
2 tbs brown sugar
50ml olive oil
salt
Method
Grate the orange zest and squeeze the oranges. Mix together with the finely chopped basil, olive oil, sugar and salt. Rub this marinade into the pork and allow to rest for 2-3 hours if possible. Place in a baking pan, pour around 500ml water and then roast in a hot oven for 2-3 hours until crispy. Add the new potatoes for the last hour.
