1 leg of lamb
4-5 sprigs of rosemary
1 bunch of parsley
5-6 onions
1 bottle Quinta de Sant'Ana - Mafra 2010
0.5l meat stock
ground black pepper
salt
Method
Season the lamb thoroughly with salt, make a slit next to the bone and stuff it with the rosemary and parsley. Place the meat in a lidded oven dish, season with pepper, and add the onions, meat broth and red wine. Roast for 3 hours in a hot oven (preheated to 200°C).
